Racking
Wine that is allowed to age on the lees can often develop an “off” taste and so winemakers use what is known as racking. Racking is the practice of moving wine from one container to another for clarification or aeration, leaving the sediment behind. It is also known as soutirage or soutirage traditionnel in French or travaso in Italian.
