Malolactic Fermentation

Malolactic fermentation is a process which converts the rather tart malic acid in a wine into a softer lactic acid. This is fairly standard in red wine production but less so in white where an acidic taste is desired.

We visit wineries, restaurants and other highlights to give you the information you need to plan a great trip to Italy. We can design itineraries, advise on bookings and show you the Italy that the tour companies don’t tell you about.
